Spinach Pine Nut Chia Muffeggs

Ingredients

  • 12 eggs (beaten)
  • 1 large scoop or spoon of Chia seeds
  • 1 handful of baby spinach leaves torn
  • 50g of parmesan cheese finely grated

Method

Mix well, oil muffin tin, spoon mixture into muffin moulds.

Top with a sprinkling of pine nuts.

Bake in oven 180 degrees for about 20 minutes, until golden!
