Peanut Paste Muesli Bars

12 bars or 24 slices

 

Ingredients

  • 1 ½ cups oats
  • 8 Medjool Dates (take seeds out)
  • 1 cup almonds
  • 2 tablespoons Chia Seeds
  • ½ cup Peanut paste/Almond paste (make your own in the food processor)
  • 1/2 cup Maple syrup or Rice Malt Syrup or Raw Honey
  • 2 tablespoons Pumpkin Seeds
  • 
2 tablespoons flaxmeal (ground flaxseeds)

Method

Toast oats and almonds for 15 minutes.

Place dates in food processor and blitz until it forms a ball.

Place in a bowl, oats, almonds, date ball, seeds and flaxmeal.

In a saucepan place peanut paste & syrup, heat on low heat and stir until combined.

Add to rest of mixture and stir to combine.

Line a square tin with baking paper and press mixture into the tin.

Place in freezer to set. Cut into 12 bars or 24 slices.

Store in the fridge or freezer.
