Ingredients

  • 1 cup pitted dried dates finely chopped
  • 1 teaspoon baking soda
  • 3 bananas
  • 1/2 cup macadamia nut oil
  • 2 tablespoons Rice Malt syrup or Maple Syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup almond meal
  • 1 cup plain flour (Gluten Free)
  • 2 teaspoons baking powder
  • 50g Green & Black’s Organic 70% dark chocolate (chopped)

Method

Place dates in a large bowl with baking soda and 2 tablespoons of boiling water. Let sit while you prep the rest.

Place bananas, macadamia oil, syrup, eggs & vanilla in food processor. Blitz until all combined.

Add this mixture to the dates, then add the almond meal, flour, baking powder & chocolate.

Mix together, then pour into a lined loaf tin.

Bake in moderate oven 180 degrees for about 45-50 minutes or until the skewer comes out clean.
